Pumpkin Rice Krispies

If you're looking for an easy no bake halloween dessert then look no further! These pumpkin Rice Krispies treats are a perfect Halloween dessert.                                                                           

      Ingredients: 

  • 1/4 cup vegan butter 
  • 1 cup vegan marshmallows  
  • 1/4 cup pumpkin purée 
  • 2 cups of the rice crispies
  • 1/2 cup vanilla extract 
  • 1/4 cup chocolate chips 
  • 1/2 tsp pumpkin pie spice 
  • 1/2 tsp cinnamon 
  • 1 tsp maple syrup



Instructions 

The first thing we need to do is melt the marshmallows using the double boiler method. Add the marshmallows along with the butter into a small pot. Fill a pan with water and put the pot on top of the pan. Put on low heat and stir for a couple of minutes until the marshmallows have melted. Be patient because the marshmallows will take a couple of minutes to melt. 




Once the marshmallows have fully melted add them into a large bowl along with the rest of the ingredients. Mix everything together. I advise you put the chocolate chips last and wait a couple of minutes if you don't want them to melt completely. You will have to work quite quickly because the marshmallows tend to cool down fast. 




I added some mini marshmallows on top of the cookies as a decor. Form the mixture into cookie shapes and place into the freezer for 30 minutes. Once the 30 minutes are up take them out of the freezer and you’re done! The Rice Krispies should be sticking to each other creating a cookie shape.
