Red Lentil Patties (Vegan)


These homemade red lentil patties are a must! They are packed with protein, are super flavorful and easy to make! They also require a minimum amount of ingredients and no food processor is required! So if you're trying to up your protein intake or are trying to impress some non vegan friends, or are just tired of the same old vegan proteins, then you need to try these! 

lentils are super high in protein! 9 gram of protein in 100 grams of boiled lentils. Another great thing about lentils is unlike other beans like chickpeas, or black beans, they cook much faster. Therefore you don't need to wait all day just to get some food. They are also very inexpensive. 

These red lentil patties are slightly spicy, crispy on the outside and soft on the inside. They also have a good amount of veggies inside. And the best part about these patties is they are dairy free, egg free, and all vegan! 

Ingredients used:
Red lentils- You can also use green or brown lentils, but I find that the red lentils give the patties a bit more flavor. No soaking is needed!
Vegetable broth or salted water.
Vegetables- I used red pepper, onion, parsley, and garlic. 
Chickpea flour also called garbanzo flour. You can use any other flour to form the patties but I find they will vary in texture.
Flaxseeds or chia seeds to bind the patties. 
Spices- I used ground cumin, onion powder, cayenne pepper, and salt.
Nutritional Yeast flakes- adds a cheesy flavor to the patties. 
Oil- for frying.

How to make  
Learn how to make lentil patties with my step to step instructions below. 

Step 1
Chop the onions, garlic, and pepper into small pieces. Add some oil to a pan. Sauté the onions, garlic and peppers all together.  




Step 2 
Drain and rinse the lentils. Add lentils along with some vegetable broth into a pan to simmer for 20 minutes or until they have softened. 




Step 3 
Add the lentils, cooked veggies, spices, parsley, ground flaxseeds, and the chickpea flour into a large bowl. Make sure to chop the parsley really well so that you don't need to use a food processor! It's very easy to over-process the patties in a food processor therefore I decided to leave the food processor out.  




Step 4
Shape the patties into flat equal size circle like patties. (I know mine don't look at equal as I would have liked them to have turned out so make sure to take your time).




Step 5
Add 1 tbsp of oil for each side. The oil should be shimmering before adding the patties. Pan fry the patties for 5 min on medium heat on each side or until they are slightly browned. Transfer to a paper towel to remove excess oil.
Serve and enjoy!

150 g red lentils dry
1 cup vegetable broth 
100 g pepper diced 
100 g onion diced 
2 garlic cloves 
1/2cup  chickpea flour 
2 tbsp flaxseeds 
3 tbsp parley 
1 tsp smoked paprika 
3/4 tsp ground cumin 
1/2 tsp onion powder
1 tbsp nutritional yeast
1/2 tsp cayenne pepper
3/4 tsp salt
Oil
