Pumpkin Yogurt Clusters 



These pumpkin yogurt clusters are my latest obsession! They are pumpkin flavored and have just the perfect amount of sweetness to them! A fall heaven. If you're craving sweets but also want something on the healthier side then I gotcha! These pumpkin yogurt clusters will not disappoint! 


My favorite thing about making yogurt clusters is that they require no baking or cooking and will last for weeks in the fridge unlike other sweet treats.


Ingredients:

  • Non-dairy Yogurt: I like to use yogurt that is nice and thick. My go to are: Sprouts plain vegan yogurt, cocojune & SO Delicious coconut yogurt!
  • Maple syrup: I found 1 tablespoon to be just the right amount if sweetness. I didn't want to over load these with sugar, and still wanted to keep that nice yogurt flavor. 
  • Vanilla Extract: You will only need a little for a little more flavor 
  • Dark Chocolate chips: Most dark chocolate chips with high cocoa content are vegan! While most chocolates might say "may contain milk" it's really your call on that. If you want to be safe use 70% dark chocolate and over because it is usually always vegan! Just always check the labels.
  • Coconut Oil: You'll need 1 tbsp of coconut oil to help melt the dark chocolate chips.
  • Cinnamon: for extra flavor 
  • Pumpkin Spice: for extra flavor 
  • PB fit or Almond butter: (optional) You don't need the nut butter but it sure adds a great flavor. 

Instructions/ the fun part! 

Combine the yogurt with pumpkin puree, spices, maple syrup, and Pbfit. 
Mix everything nice and well. 


Once you have your mixture go ahead and make circle shaped yogurt clusters on your parchment paper. 
Set into the fridge for an hour to an hour and a half. 
You want them to harden, but not completely frozen. 
If they are still melting when you try and grab them out of the parchment paper that means they need more time in the freezer. 


Melt you're chocolate chips or just cut up a dark chocolate bar into small pieces and add some coconut oil. I have melted chocolate without coconut oil and it melted just fine on its own. So if you don't have coconut oil you can leave it out. 

Melt your chocolate in 30 second intervals, stirring between each session until your chocolate is fully melted. 

Once your chocolate has melted, carefully take the yogurt clusters out of the freezer and carefully dip each one in chocolate. DO NOT take them out of the freezer before the chocolate is fully melted because in my experience the yogurt melts really fast. Be gentle coating them in chocolate because the clusters are really thin. Now put them back into the freezer for another 10 minutes or until the chocolate has hardened.  

Take them out of the freezer and store in the fridge or eat right away. Enjoy! This recipe makes a total of six clusters.

Coconut Oil 1 tbsp

Cinnamon 1/4 tsp

Pumpkin Spice 1/4 tsp

Vanilla extract 1/4 tsp

PB fit or Almond butter 1 tbsp
