Vegan California Rolls 


I'm gonna be honest I wasn't a fan of vegan sushi until I made these vegan California rolls. They are a 10/10! Better than the real thing. Yes, really! This recipe is straightforward and easy to follow. The best part is there is no frying or baking involved just chop, toss and mix everything together! 

Ingredients to make vegan crab: 


Canned Hearts of Palm: most of you are probably unfamiliar with hearts of palm including myself until I tried it this year. It is a healthy vegetable that comes from the core of certain palm trees which contain seventeen different amino acids as well as minerals. They have a flaky like texture perfect for this crab recipe! 


Gerbanzo beans


Veggies: Red peppers, onion and celery sticks 


Seaweed 


Panko breadcrumbs: Panko breadcrumb are perfect in this recipe to make the vegan crab less soggy.


Sauces

How to make vegan crab:


Step 1: Chop hearts of palm into tiny peaces. Mash the hearts of palm and garbanzo beans using a potato masher or fork. Place into a medium to large sized bowl.





Step 2: Chop the onions, bell pepper, celery stick, and nori sheets into tiny pieces and add into the bowl. Feel free to add more bell peppers if you want the vegan crab to be more red. 




Step 3: Add panko bread crumbs. Mix well to combine.





Step 4: Add the mayo, ketchup, Worcestershire sauce, old bay seasoning, soy sauce, and sweet relish. Taste and adjust if needed. Mix well until thoroughly combined.  





Put the vegan crab into a blender and blend for a few seconds. 

Now that our vegan crab is ready, it's time to make the sushi! Grab a large Nori sheet and cut it in half using a sharp long knife. Spread the rice all over the Nori sheet. Add sesame seeds and the vegan crab on the bottom side of the nori sheep. Now roll the Nori sheet upward all the way through. Carefully cut into circles. (I suggest using a sharp long knife to do this because it can be hard to cut the nori sheet without ruining the sushi). Now just repeat the process and make more sushi! That's it, enjoy! 1 can hearts of palm

3/4 cup gerbanzo beans cooked or canned 

1/2 panko bread crumps

1/4 cup chopped onion 

3/4 cup chopped bell pepper (Add more for color if needed)

2 seaweed packets

1 tbsp sweet relish 

1 tbsp of ketchup

2 tbsp vegan mayo 

1 tsp vegan worcestershire sauce 

1 tsp old bay seasoning
