Vegan Reese's peanut butter cups
Before Halloween comes to an end you need to try these Frankenstein Reese's peanut butter cups! Reese's is probably my favorite candy of all time. I find the peanut butter and chocolate to be the perfect combination whenever my sweet tooth hits. I find Plant based Reese's to be overpriced and hard to find, that's why I decided to make them myself. They are super duper easy to make and are a super tasty treat. No baking required.
Ingredients:
Dark chocolate chips: Most chocolate that is 70% cacao or higher is vegan but double check to make sure.
Powdered sugar
Peanut butter: Use a smooth peanut butter I’m using Skippy peanut butter to get that classic recess flavor.
Vegan white chocolate or vegan yogurt: Vegan chocolate is rare to find so if you can’t find it you can use vegan yogurt as a substitute. Note: your freezing time will be longer.
Green matcha: To make the chocolate green.
Vegan gram crackers: Vegan gram crackers are also rare because the regular once contain honey. If you can’t find any, Biscoff cookies can work as a substitute.
Cupcake tin: the non stick cupcake pan works best.
Start off by melting the white chocolate with a tad of coconut oil. I’m melting the chocolate in the microwave at 30 second intervals.
Next add the green matcha and 2 tiny drops of food coloring (optional) but will help with color.
Add 3 tsp and a half of green chocolate into each of the cupcake tin and put in the freezer for 10 minutes. Be really careful when placing in the freezer as the chocolate can easily spill.
White the chocolate is freezing grab 5 gram crackers and blend them for 30 seconds.
Mix the peanut butter, powdered sugar and gram crackers together into one big ball.
Form 6 balls and slightly press on them to create a patty form. Scoop out 1 tsp and a half. Place onto the parchment paper and freeze for 5 min.
Take the green chocolate out of the freezer and put the patty's on top of the green chocolate.
Melt the dark chocolate chips with a bit of coconut oil and put 1 tsp and a half on top of each peanut butter cup. Slightly tap them on your table to even the chocolate out.
Carefully put them back into your freezer for another 10-15 minutes.
Enjoy! (Be warned they melt quite fast so if you’re not gonna eat them right away I recommend putting them in the fridge!)

2 vegan white chocolate

5 Vegan gram crackers
2 drops food coloring (optional)
1/3 cup smooth peanut butter
